Potato Flip-Flops

Ingredients

  • 4 potatoes
  • 1/2 cup olive oil
  • 32 cup green beans

Preparation

Baking Directions:

Preheat oven to 400 degrees.

Wash and dry the potatoes.

Cut the potatoes lengthwise into ¼" slices.

Drizzle half of the olive oil into a foil-lined cookie sheet.

Place the potatoes on the cookie sheet and drizzle the remaining olive oil over them.

Sprinkle with salt and pepper and bake in the oven until the potatoes are tender and starting to brown (30-40 minutes).

Meanwhile, steam the green beans until bright green and still a little crunchy (about 5-10 minutes).

Set aside.

Remove the potatoes from the oven.

With a small knife or a chopstick, punch holes widthwise into the potato slices on either side of the potato, and one hole in the center at one end of the potato.

Insert the green beans into the holes to create straps for the flip-flops.

Serve in pairs as a side dish to a nice lunch or dinner, or as an appetizer at a party.

If you like the taste of rosemary, sprinkle some on the potatoes before baking.

It's also easy to add a little decoration to your flip-flops.

Slice a carrot or radish into quarter-inch rounds.

Cut tiny triangles out of the rounds to create flowers.

Place a radish flower on top of the green bean straps where they form a V.
