Ingredients

  • 3 tablespoons whipped butter
  • 4 cups mini marshmallows
  • 6 cups light popcorn (air-popped or any commercial brand)
  • 1/4 cup semisweet chocolate chips (optional)

    Joy Bauer's alternative to Rice Krispies Treats are made with popcorn instead of rice cereal, so they have more filling fiber.

    Preparation

    Spray a 7 x 11–inch pan with nonstick oil spray and set aside.

    Melt the butter in large pan over low heat. Add the marshmallows and stir continuously until they melt and the mixture is well-blended.Add the popcorn and stir until all of the popcorn is covered and coated in melted marshmallows.

    Pour the mixture into the prepared pan and press down to spread and shape. (Spray hands with nonstick oil spray so the popcorn doesn’t stick.)

    Let the treats cool and harden.

    If using the chocolate, melt the chocolate in the microwave by heating for 15 to 30 seconds at a time, stirring in between, until chocolate is smooth and velvety. Or melt the chocolate on the stove top in a double boiler or saucepan over low heat. Drizzle the melted chocolate in any preferred design over the top of the marshmallow treats.

    Cut into 12 squares and enjoy.
