These spicy bites are sure to disappear fast! They're great for game-day but make a pleasant addition to any appetizer spread.

Technique tip: Use a 1-ounce scoop to make even portions.

Ingredients

  • Olive oil
  • 1 pound hot breakfast sausage, cooked and crumbled
  • 4 ounces cream cheese, at room temperature
  • 12 ounces pimento cheese with jalapeño, preferably Palmetto Cheese
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • cups pancake mix, preferably Bisquick

Preparation

Preheat oven to 350°F. Rub sheet pan with olive oil.

In a large bowl mix sausage with cream cheese. Add pimento cheese, salt and pepper and mix. Add the pancake mix and fold in until completely incorporated.

Roll the mixture into 1-inch balls and place on sheet pan.

Place in oven and bake 20-25 minutes. Let rest 10 minutes then serve warm or at room temperature.
