Having delicious, perfectly roasted sweet potatoes on hand during the week is a game-changer. I love eating them on their own, stuffing them, turning them into savory scallion pancakes or even sweet potato soup!

Ingredients

    • 12 medium-sized sweet potatoes (about 7 ounces per potato)

Preparation

1. Preheat oven to 425°F.

2. Using a fork, poke holes in sweet potatoes on all sides (this prevents the potatoes from exploding when they're the oven).

3. Bake on a tin foil lined rimmed baking sheet for 60-80 minutes, until bubbling with juices and tender throughout.
