Peas with Mint



  • 1 cup frozen peas
  • 1/2 cup water
  • 1 sprig (about 4 leaves) of fresh mint


Baking Directions:

Add peas to boiling water and simmer for about 3 to 5 minutes, until they are still bright green in color.

Using a small food processor, puree cooked peas with chopped fresh mint until smooth.

If necessary, add several tablespoons of the cooking water to achieve a thinner consistency.

If desired, cook a larger batch and then freeze for future use.
