My mother, Catherine, used to make apple boats for my sister and me as an afternoon snack. We loved to eat the cheese first and then devoured the rest! The recipe is wonderfully versatile and works with many different fruits and flavors. It's great for kids and a fun fall recipe to make after a trip to the apple orchard.

Technique tip: Dab a little lemon juice or lemon lime soda on the cut side of the apple to prevent browning. Serve immediately so that rice cereal stays crispy.

Swap option: You can use almond butter, cream cheese or caramel sauce instead of peanut butter. You can also use yellow pepper or pineapple instead of cheese for the sail, and/or pear instead of apple for the boat.

  • 1/2 cup peanut butter
  • 1 cup crispy rice cereal
  • 2 medium apples, cored and sliced into 4 pieces with two flat sides
  • 4 thick slices cheddar cheese, cut diagonally into triangles



In a bowl, mix the peanut butter with rice cereal together using a spatula.


Use the ice cream scoop to place the peanut butter mixture onto the apples, with the rounded side down.


Top with the cheese triangle.
