Ingredients

Buttermilk Waffles
  • 2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 2/3 cups buttermilk
  • 1 tablespoon vanilla
  • 1/4 cup unsalted butter, melted
  • Zest of 1 lemon
  • Peaches and Cream Topping
  • Olive oil to coat peaches
  • 2-3 peaches, pitted and sliced
  • Melted unsalted butter
  • 1 cup mascarpone
  • Maple syrup
  • Chopped pecans

    Take your waffles to the next level with a delightfully easy peaches and cream topping.

    Preparation

    Preheat and lightly grease a waffle iron. In a large bowl, sift together the dry ingredients.

    In a clean bowl, beat the eggs. Add the buttermilk, vanilla, melted butter and lemon zest and beat to combine. Fold the wet ingredients into the dry ingredients. Let sit for a few minutes. (Batter can be made ahead, covered, and refrigerated for up to a week.)

    Lightly oil the sliced peaches and cook in a hot grill pan or outside on a grill until you get some nice grill marks.

    Pour the batter into the hot waffle iron and cook until golden-brown and crisp.

    Brush waffles with melted butter and top with grilled peaches, mascarpone, maple syrup, and pecans.
