Ingredients

  • 1 tablespoon olive oil
  • 1/2 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 (6-ounce) filet mignon or flank steak, very thinly sliced
  • 1/2 teaspoon salt
  • 1 dash freshly ground black pepper
  • tablespoons ketchup
  • 1/2 tablespoon Dijon mustard
  • 3 tablespoons Pepper Jack cheese
  • 1/2 loaf French bread, heated
  • 1/2 avocado, sliced
  • 1 teaspoon chopped cilantro
  • 1 tablespoon salsa

    This is comfort food to the max! It's just like the classic Philly version but I added the Los Angeles twist of avocado and salsa because it adds a nice kick and makes it a little bit healthier. Also, whenever I have leftover steak from dinner, I just cut up the beef and add all the ingredients and have a delicious sandwich for lunch.

    Swap option: Can substitute with chicken if you are not into red meat. Just slice the chicken very thin and prepare in the same way.

    Preparation

    1.

    Preheat oven to 350°F. In a sauté pan, heat the olive oil.

    2.

    Add the peppers and onions and sauté for 1-2 minutes.

    3.

    Add the sliced beef and season with salt and pepper. Sauté until cooked to medium-well.

    4.

    Add ketchup and mustard to the beef and add cheese. Cook another minute until all ingredients are mixed in and the beef is cooked through.

    5.

    Heat the French bread in the preheated oven for 2 minutes. Add avocado slices and cilantro to the bread. Add beef mixture to the bread and top with salsa.
