Ingredients

  • 1 cup purchased or homemade muesli (free of added sugars)
  • 3 tablespoons cold butter, cut into small pieces
  • 1 teaspoon ground cinnamon
  • 4 cored apples (such as Honey Crisp)
  • 1 cup apple juice

Chef notes

Most muesli is just sugar-coated oats. In this recipe, you get the heartiness of the classic breakfast but it’s not cloyingly sweet. The result is apple pie for breakfast.

Technique Tip: To make quick homemade muesli, combine 1/2 cup rolled oats, 1/4 cup chopped nuts of choice and 1/4 cup chopped dried (unsulfured) fruit of choice.

Preparation

Preheat oven to 350° F. In a small bowl, combine muesli, butter, and cinnamon. Place the apples in a baking dish and stuff with the muesli mixture. Pour the apple juice around the apples and loosely cover the dish with foil. Bake for 45 to 50 minutes, basting occasionally with the juices, until apples are tender.
