Chef notes

Easy to make and even easier to eat, these one-bite mozzarella eyeballs come together in a snap. Have fun and display these in a head of cauliflower to resemble a brain. Drizzle with a little balsamic glaze for some sweetness and a creepy drip effect!

Swap option: Use any sliced olive, such as Castelvetrano.

Ingredients

  • 2 (7-ounce) containers bocconcini (mozzarella balls)
  • 1/2 cup black olives, sliced into rounds
  • 1/3 cup pimento peppers, sliced
  • cauliflower head, for display (optional)
  • balsamic glaze, for serving

Preparation

1.

Add a mozzarella ball onto a toothpick. Place a slice of olive on top.

2.

Add a piece of pimento pepper on top of the olive to create the eyeball.

3.

Place toothpicks into a head of cauliflower as a fun way to display and serve. Drizzle with balsamic glaze before serving.
