I’m definitely a snack-obsessed person that often needs a sweet pick-me-up throughout the day. Luckily, I usually have these miso-almond date bites to save the day every time. The crunch from the almonds, umami from the miso and caramel sweetness from the dates all combine to make this a perfect snack or quick dessert. Pro tip: Never skip that gorgeous chocolate drizzle on top.
Ingredients
- 8 to 9 large Medjool dates, pitted
- 1/3 cup shredded, unsweetened coconut
- 1/2 cup raw almonds
- 1 tablespoon white miso paste
- 1/2 teaspoon vanilla extract
- 3 tablespoons creamy almond butter
- Pinch sea salt
- 1/3 cup dark chocolate chips
- 1 teaspoon coconut oil
- Flaky sea salt, for topping
Preparation
1.Add dates, flaked coconut, raw almonds, miso paste, almond butter and vanilla extract into a high-speed blender or food processor. Add a pinch of salt, if desired. Blend until ingredients are mostly pulverized and only very small pieces remain. The dough should be thick and sticky.
2.Using a small cookie scoop, form dough into round bites and place on a parchment paper-lined sheet tray or plate.
3.Place the bites in the fridge for at least 15 minutes to harden, then prepare the chocolate.
4.Melt the dark chocolate chips and coconut oil together in the microwave in 30-second intervals.
5.Remove the bites from the fridge. Drizzle with the melted chocolate, or alternatively, coat each bite completely in chocolate. Sprinkle with flaky sea salt.
6.Transfer bites to the fridge or freezer and allow the chocolate to harden, about 30 minutes in the fridge or 10 minutes in the freezer. Store bites in the fridge or freezer.
