Chef notes

A handful of ingredients is all you need to make this delicious summer drink.

Ingredients

  • 1/2 cups warm water
  • 1 1/2 cups sugar
  • 3/4 freshly-squeezed lemon juice
  • 10 mint springs
  • 2 1/2 cups club soda or seltzer water
  • Lemon slices and mint sprigs for garnish

Preparation

In a bowl combine the warm water, sugar and mint. Stir and let sit until sugar is completely dissolved and the mint flavor is infused, about 45 minutes or overnight in the refrigerator.

Strain out mint. Divide the infused mixture into 2 large pitchers filled with ice. Add equal amounts of lemon juice to each and top with equal amounts of club soda.

Serve over ice and add mint sprigs and lemon slices for garnish.
