Chef notes

These tasty sliders are made with Wagyu beef and Aged Vermont cheddar at New York City's Rainbow room. If you can't find these ingredients, choose the highest quality alternatives you can find.

Ingredients

  • 1 pound ground Wagyu beef or other high-grade beef
  • Oil
  • 1 teaspoon garlic salt
  • 1 teaspoon pepper
  • 16 slices aged Vermont cheddar cheese, cut to size
  • 16 mini brioche bread buns, split
  • 2 pickles, sliced
  • 3 small tomatoes, sliced
  • Bibb lettuce, washed and cut to size
  • Condiments of your choice

Preparation

Preheat a grill or grill pan to medium-high. Form the beef into 4-ounce patties, about 1/2-inch thick.

Oil the grill, add the patties and season with the garlic salt and pepper.

Grill until the patties are cooked halfway through, about 3 minutes.

Flip the patties, place the cheese on top and cook the other side for 3 more minutes or to desired doneness.

Set the cooked patties on the brioche bun bottoms.

Top with the pickles, tomato slices, lettuce and condiments to taste.

Place each top bun and secure with toothpicks. Serve on a tray.
