Mary Jean's Healthy Apple Crisp

  • 8-10 apples peeled, cored, and sliced (I use a mix of Macintosh and 2 others)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon whole wheat flour
  • 1 packet stevia
  • 3 tablespoons water
  • Crumble
  • 1 cup quick cook oats
  • 1 cup whole wheat flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup smart balance
  • 2-3 tablespoons warm water (add enough so that this mixture forms crumbs and sticks together)
  • Preparation

    Preheat oven to 350 degrees.

    Mix cinnamon, flour and stevia and toss it with the apples.

    Sprinkle 3 tablespoon water over the apples.

    Put the apples in a baking dish sprayed with oil. I use an oblong baker.

    In another bowl, mix together crumble mixture and sprinkle crumbs over the apples.

    Bake at 45 minutes until crumbs slightly brown and apples are bubbling on the side.

    Can be served with a dollop of light whipped cream.
