Marinated Broccoli Rabe Sandwich

Ingredients

For the broccoli rabe:
  • 12 ounce broccoli rabe
  • 1/2 cup olive oil
  • 1 clove garlic
  • 2 clove pepperocino
  • 1 tablespoon lemon juice
  • 1 tablespoon Kosher salt
  • 1 tablespoon Pepper
For the sandwich:
  • 12 ounce broccoli rabe
  • 1/2 cup olive oil
  • 1 clove garlic
  • 2 clove pepperocino
  • 1 tablespoon lemon juice
  • 1 tablespoon Kosher salt
  • 1 tablespoon Pepper
  • 1 baguette
  • 8 ounce mozzarella cheese
  • 12 ounce broccoli rabe
  • 4 ounce yellow onion
  • 4 ounce red peppers
  • 4 ounce nicoise olives
  • 1/3 teaspoon sicilian oregano

Preparation

Baking Directions:

For the broccoli rabe:Wash the broccoli and trim woody stems.

Cook, blanch and drain broccoli of all excess water.

Add all ingredients into a bowl and toss well.

Season to taste with kosher salt and freshly ground black pepper.

For the sandwich:Split baguette lengthwise, making certain that the top and bottom halves are equal.

Drizzle the top half with olive oil.

On the other half, layer ingredients from the bottom up in the order they are listed above.

Be sure to evenly sprinkle oregano over the sandwich.

Slice into 4 equal parts and serve.
