Serves 6 to 8 Servings
Ingredients
- 2 tablespoon vegetable oil
- 1 tablespoon large clove garlic, peeled and minced
- 1 ounce ginger, peeled and minced
- 8 ounce dried shitakes, soaked until pliable, stems discarded, caps julienned
- 1 pound baby bok choy, stems trimmed, leaves separated
- 1 pound fresh round, thick wheat noodles, blanched and drained
- 2 tablespoon soy sauce
- 1 tablespoon dark sesame oil
- 1 tablespoon scallion, trimmed and thinly sliced
Preparation
Baking Directions:
In a large nonstick pan, add the oil and stir-fry the garlic and ginger until fragrant, about 30 seconds.
Add the shitakes and bok choy and continue to stir-fry until just wilted.
Add the noodles, soy sauce and sesame oil and stir-fry until heated through.
Season with pepper to taste and serve, garnished with scallions.
