Longevity noodles

Ingredients

  • 2 tablespoon vegetable oil
  • 1 tablespoon large clove garlic, peeled and minced
  • 1 ounce ginger, peeled and minced
  • 8 ounce dried shitakes, soaked until pliable, stems discarded, caps julienned
  • 1 pound baby bok choy, stems trimmed, leaves separated
  • 1 pound fresh round, thick wheat noodles, blanched and drained
  • 2 tablespoon soy sauce
  • 1 tablespoon dark sesame oil
  • 1 tablespoon scallion, trimmed and thinly sliced

Preparation

Baking Directions:

In a large nonstick pan, add the oil and stir-fry the garlic and ginger until fragrant, about 30 seconds.

Add the shitakes and bok choy and continue to stir-fry until just wilted.

Add the noodles, soy sauce and sesame oil and stir-fry until heated through.

Season with pepper to taste and serve, garnished with scallions.
