Serves 4 to 6 Servings
- 4 avocados
- 1/2 cup cilantro
- 1/2 cup scallions
- 2 tablespoon serrano chiles
- 1/4 cup white onion
- 1 1/2 tablespoon lemon juice
- 1 teaspoon salt
- 1 cup chopped cooked lobster (substitute crabmeat if desired)
- 1/2 cup diced tomato
Halve the avocados and remove the pits.
Scoop the meat into a large bowl.
Add remaining ingredients, except lobster and tomato, and mix well.
Gently fold in lobster and tomato.
Taste and adjust the seasoning with salt, lemon juice and more chiles, if desired.
