- 1/2 cup sour cream
- 3 tablespoons green salsa
- 1 tablespoon olive oil
- 3 slices leftover meatloaf, about 2 cups when crumbled
- 1/3 cup water
- 1/2 cup white onion, diced fine
- 1/2 cup cilantro, chopped fine
Mix sour cream and salsa, set aside.Put oil and meatloaf in a nonstick pan, and break up over medium heat until well crumbled.Add water and stir well — heat through.Warm tortillas on a flat griddle or pan on both sides until just getting color, but not crispy.Sread some salsa cream on a tortilla, add the beef, then top with onion and cilantro.
