Ingredients

  • ½ red onion
  • 1 habanero chile
  • 5 tablespoons mint leaves
  • Salt, to taste
  • 3 limes, juiced
  • 6 avocado
  • 1 apple
  • 1 pomegranate

    Give your guacamole a twist with this recipe from Juan Pablo, chef at Rosewood Mayakoba.

    Preparation

    1. Mix the red onion, chile, apple and mint with the salt in a bowl. Leave it to rest for at least 5 minutes.
    2. Add the lime juice and mix it well until salt dissolves
    3. Add the avocado and mix it with a spoon until it’s the consistency of a thick and chunky guacamole (never mash the guacamole).
    4. Top with pomegranate seeds.
    5. Taste test to make sure there is enough love and serve with crispy corn tortilla chips.
