A grilled cheese sandwich is the bear hug of comfort foods and this is a fast twist on it. Instead of toasting the sandwich in a skillet, the bread gets toasted in a toaster. The curried onions are prepared ahead of time.
Technique tip: Use a toaster to quickly toast the bread.
Swap option: Use gluten-free bread for a gluten-free sandwich.
Ingredients
- 3 teaspoons extra-virgin olive oil
- 1/2 cup sliced red onion
- salt
- freshly ground black pepper
- 1/2 teaspoon curry powder
- 2 slices multigrain bread
- 1½ ounces (about 1/4 cup) blue cheese, crumbled
Preparation
1.Heat 2 teaspoons of the olive oil in a 10-inch cast-iron skillet over medium heat, tilting the pan to coat the bottom. Add the onion, a pinch of salt and a grind of pepper. Cook, stirring occasionally, until the onion is translucent, about 5 minutes. Stir in the curry powder and cook for another 3 minutes.
2.Place the two slices of bread in a toaster and toast until they are lightly brown. Spoon the onions onto one slice of toast, spreading them to cover the surface, and arrange the cheese on top in a single layer.
3.Add the second slice of toasted bread on top of the cheese and onions. Cut the sandwich in half, if desired, and eat immediately.
