Peel the kiwis (reserving 2 long slices of peel for the trunk) and cut into 1/4-inch-thick slices and arrange in a tree shape on a large serving platter.
Cut a 1/4-inch-thick slice of pineapple, use a star cookie cutter to create a star and place it at the top of the tree. Add the reserved kiwi peel under the tree for the trunk. Sprinkle with the pomegranate seeds.
