Ingredients

  • For kale salad:

    • 1 bunch organic kale
  • For lemon vinaigrette:

    • 1 bunch organic kale
    • 2 tbsp lemon juice
    • 2 tbsp agave nectar
    • 4 tbsp extra-virgin olive oil
  • For yogurt-quinoa mixture:

    • 1 bunch organic kale
    • 2 tbsp lemon juice
    • 2 tbsp agave nectar
    • 4 tbsp extra-virgin olive oil
    • 1 cup cooked quinoa
    • 2 tbsp verjus
    • 1/2 cup Greek yogurt
    • 1/2 lemon, zested and juiced

Preparation

Baking Directions:

Clean and chiffonade your favorite type of kale — curly green, red Russian and black kale all work well. Dress this lightly with lemon vinaigrette, salt and pepper. Perch atop the yogurt-quinoa mixture.
