Ingredients

  • One 3.4-ounce package instant vanilla pudding
  • 5 cups low-fat (1%) milk
  • 3/4 teaspoon rum extract
  • 1/2 teaspoon fresh nutmeg

    Traditional eggnog, made with cream, whole milk and egg yolks, will cost you a shocking 350 to 450 calories and 12 grams of saturated fat per cup! My slim-style version satisfies your craving for half the calories and sugar—and a fraction of the fat.

    Preparation

    Combine the milk, pudding mix, rum extract and ground nutmeg in a blender and blend until mixed.

    Pour into a pitcher and refrigerate for up to 20 minutes to allow the eggnog to set. The longer you leave it to chill, the thicker it will get, so be sure to take it out by the 20-minute mark and serve immediately. If it's too thick, add milk a little bit at a time and blend to make sure you get the consistency you want. Garnish each glass with a sprinkle of a little extra nutmeg and serve.
