These savory bites are the ideal way to balance out your candy-induced sugar shock. That's because each edible "eyeball" is packed with blood-sugar-stabilizing stuff: protein-rich egg whites plus fiber-filled hummus and guacamole, which also contribute heart-healthy fat. I love to kick things up a notch in the decoration (and heat) department by making the eyeballs look extra eerie with bloodshot streaks using a drizzle of sriracha.

Swap option: You can also use red pimentos that come with sliced green olives instead of pimentos. If spice isn't your thing, you can certainly swap in a mixture of tomato paste and light mayo instead of the sriracha.


  • 6 hard-boiled eggs, peeled
  • 1/4-1/2 cup guacamole
  • 1/4-1/2 cup hummus
  • black or green sliced olives
  • 1/4 red bell pepper, finely chopped
  • sriracha (optional)



Slice the eggs in half lengthwise and remove the yolks, reserving for another purpose.


Fill the empty center of each egg white with about 2 teaspoons of guacamole or hummus (you can use a small spoon or pipe in the filling by using a zip-top bag with a tiny hole cut in corner).


Create eyeballs by decorating each egg with an olive slice and red pepper or pimento piece in the center of the guacamole or hummus filling. Then lightly drizzle optional sriracha or tomato paste-mayo mixture on the outer egg whites to resemble blood vessels.
