Chef notes

This strawberry-mint smoothie is a great way to get fruits and veggies all in one drink. And it’s great to serve the kids since I've noticed that kids tend to enjoy the refreshing taste of mint. Plus, it also helps mask some of the spinach flavor.

Swap option: If kids don’t like it in the smoothie form, freeze it in an ice-pop mold.

Ingredients

  • cups water
  •
1 lemon, juiced
  •
2 cups baby spinach, packed
  • 1/4 cup fresh mint leaves, packed
  •
2 cups frozen strawberries
  •
1 cup frozen mango
  •
1 tablespoon agave nectar, preferably organic

Preparation

Add all ingredients above (in the order listed) to a high-powered blender.

Blend on high until smooth.

Divide into four cups and serve.

To make ice pops, pour the mixture evenly into ice pop molds and freeze until set.
