Chef notes
If you like your wings hot, this is the recipe for you! Sizzling habanero sauce and spicy cayenne give these wings some serious heat.
Preparation
Remove chicken wings from packaging and pat dry. Season all over with salt, pepper and cayenne, then place in a single layer on a baking sheet. Cover and refrigerate until ready to grill.
For the wing sauce:
Combine habanero hot sauce, butter, honey and lime juice in a small saucepan and cook over medium heat until butter melts. Allow mixture to bubble for a minute, thickening slightly, then set aside to cool.
To cook and serve:
1.Light one side of your grill to medium-high heat (between 350°F-400°F) and leave one side of the grill "cold."
2.Start the chicken wings on the cold side of the grill, with the lid closed. Grill for 20 minutes, turning once.
3.Use the wing sauce to baste the side of the chicken wing that's facing you, then flip that side down onto the hot part of the grill. Baste the other side of the wing that's now facing up. Finish grilling the wings over a medium-high flame for about another 10 minutes, or until the sauce has caramelized, turning every few minutes.
4.Pour remaining sauce over wings and serve.
