Ingredients

  • 1 mascarpone cheese
  • 1/2 cup granulated sugar
  • 2 teaspoon rum extract
  • 1 teaspoon pineapple
  • 3 teaspoon mangos
  • 4 teaspoon banana
  • 1 teaspoon (9-inch) graham cracker crust
  • 7 ounce graham cracker crumbs
  • 1/3 cup cake flour
  • 1/4 cup granulated sugar
  • 6 ounce unsalted butter (melted)

Preparation

Baking Directions:

For the tart fillingCombine the mascarpone, sugar and rum extract.

Spread evenly over prepared graham cracker crust.

Sprinkle fruit with granulated sugar and grill just until sugar caramelizes and then layer on top of mascarpone cream.

Refrigerate for 1 hour before serving.

For the graham cracker crustCombine all ingredients.

Press onto the bottom of 9-inch pie pan.

Bake at 350° for 12 minutes and set aside.
