Ingredients
- 1/4 cup butter
- 1/2 cup whipping cream
- 1/2 cup vodka
- 2 tablespoon peppercorns
- 3 teaspoon lime juice
- 1/4 teaspoon salt
- 24 ounce swordfish steaks
- 24 ounce salt
- 1 ounce lime
Preparation
Baking Directions:
1.Preheat the grill to medium-high.
2.In medium saucepan melt butter.
Add cream and vodka and bring to a boil for about 4 minutes until slightly thickened.
Stir in peppercorns, lime juice, salt.
Cover, remove from heat, set aside.
3.Season the fish with salt and pepper.
Grill for 6 to 8 minutes or until fish is opaque and flakes easily when tested.
Turn once halfway through grilling time.
4.Transfer the fish to plates.
Spoon vodka cream sauce over each.
Garnish with lime wedges.
