Grilled Spice-Rubbed Duck Breast with Grilled Peaches

Ingredients

  • 6 duck breasts
    Spice Rub Mix
    • 6 duck breasts
    • 2 teaspoon chinese 5-spice powder
    • 1 teaspoon ground coriander seed
    • 1 teaspoon ground mustard seed
    • 2 tablespoon sea salt
    • 2 tablespoon black pepper
    • 1 teaspoon ground poultry seasoning
    Grilled Peaches
    • 6 duck breasts
    • 2 teaspoon chinese 5-spice powder
    • 1 teaspoon ground coriander seed
    • 1 teaspoon ground mustard seed
    • 2 tablespoon sea salt
    • 2 tablespoon black pepper
    • 1 teaspoon ground poultry seasoning
    • 6 peaches

    Preparation

    Baking Directions:

    Marinate and grill duck breasts1. Have butcher trim away any excess fat from around duck breast.

    2. Using a sharp knife, score the skin lightly in a cross hatch patter, but do not cut into flesh.

    3. Season duck breast on on both sides with spice rub (see recipe).

    Let duck marinate with spice rub at room termperature for 1 1/2 hours before grilling.

    4. Set grill on medium high heat.

    Grill duck breasts, 5 to 6 minutes on each side.

    Duck breasts should be cooked no more than medium.

    Internal temperature should read on thermometer 130° to 135°.

    5. Remove duck breasts from grill and let rest for 8 minutes before slicing.

    Cut just as you would steak.

    Serve with grilled peaches on the side.

    Spice Rub MixMix all spices together and generously rub on both sides of duck breasts.

    Grilled Peaches1. Split peaches in half carefully and remove pits.

    2. Brush lightly with olive oil, salt and pepper.

    3. Grill until all sides are browned, about 5 minutes.

    Turn and continue cooking until peaches feel soft to the touch.
