Chef notes
Anything served on a skewer is great for a party because you can easily carry your food around with you! Pork butt is a deliciously tender meat that works well with a variety of seasonings but I’m partial to this marinade with its perfectly balanced sweetness.
Ingredients
- 1/4 cup dark soy sauce
- 5 lemons, juiced
- 1/2 cup brown sugar
- 5 cloves garlic, finely chopped
- 1/4 cup oyster sauce
- 1 (12 ounce) can Coca-Cola
- 1 teaspoon ground black pepper
- 12 (8-inch) bamboo skewers
- 1½ pounds pork butt, diced into 1½-inch cubes
Preparation
1.In a large mixing bowl, combine all ingredients for the marinade. Whisk vigorously to ensure all elements are blended together and marinade is homogenous
2.Add in pork butt cubes, cover, and refrigerate to marinate for at least 4 hours and up to 24 hours.
3.Place skewers in water to soak for 30 minutes prior to cooking.
4.Remove skewers from water and skewer 5 to 7 pork butt cubes on a skewer. Repeat until all of the meat is skewered.
5.Heat a grill to medium-high heat. Place the skewers on the grill at the base of the heat to ensure they don't catch fire or burn. Grill on all 4 sides for about 2 minutes per side, or until dark golden brown and charred marks appear on the pork. Remove from the grill and serve.
