I love this dish because it so easy to make and it's an elevated game-day appetizer. The garlicky shrimp, creamy avocado and crispy crostini come together for a pretty much perfect bite. They're a guaranteed crowd-pleaser!
Swap option: You can swap steak for shrimp.
Ingredients
- 12 slices baguette
- 1/2 stick butter, softened
- 1/2 teaspoon garlic salt
- 1 avocado
- 1 lime, juiced
- 1 tablespoon diced red onion
- 1 tablespoon chopped cilantro
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 12 large shrimp
- 3/4 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Preparation
1.Preheat oven to 350 F and move rack to the top. Line a baking sheet with parchment paper and place baguette slices in even layer.
2.Add the butter and garlic salt to small bowl and mix. Brush each side of baguette slices with butter mix. Bake for 10 to 15 minutes or until they're as crisp as you like.
3.Prepare the avocado by mashing in a small bowl and mixing with the lime juice, red onion and cilantro. Set aside.
4.While baking crostini, heat the olive oil in a large skillet over low heat. Add the garlic and cook for about 2 minutes. Raise heat to medium-high and add the shrimp, paprika, onion powder, cumin, salt and pepper. Stir to blend and cook the shrimp. Turn shrimp once or twice and cook until they are pink, about 5 minutes.
5.Spread crostini with mashed avocado and place shrimp on top. Serve immediately.
