Simply buy fresh pasta.
Cut into desired shapes and dry on a counter uncovered for several hours or overnight.
Preheat in heavy bottom saucepan with soybean oil, peanut oil or vegetable oil to about 350 degrees.
Throw pasta shapes in and watch puff.
Season with salt and pepper.
Serve as beautiful crackers with dipping sauces (mayonnaise, salsa or vinaigrette) or stuff with fortunes, like fortune cookies.
