Ingredients
- 1 banana fingerling potatoes, sliced length wise into 1/8-inch slices
- 1 yellow onion, peeled and sliced thin
- 1 garlic clove, peeled and sliced thin
- 1 slice smoky bacon, cut into 1-inch pieces
Preparation
Baking Directions:
Blanch the potatoes very briefly in salted boiling water (30 seconds to one minute).
This will prevent the potatoes from turning color.
Brush the parchment with a generous amount of butter.
Season the potatoes and onion lightly with salt and fresh ground black pepper.
Layer them over the parchment neatly within the 4-inch square with 2 to 3 slices of each.
Place the second sheet of parchment on top and wrap the foil over top to create an enclosed package.
Grill each package approximately 3 to 4 minutes on each side and then allow the packets to set for 2 to 3 minutes off the grill before enjoying.
Tips:
Any type of small potato would be fine.
