In the same skillet, turn heat up to medium-high and add the kimchi. Spread it evenly throughout the pan so that it roasts evenly, about 2 minutes. Add honey and give the kimchi a toss, roast for another 2 minutes. Set aside.4.
Spread the butter evenly over all 4 slices of bread. Add garlic powder to the butter. Flip slice so that the unbuttered side is facing up.5.
Mix shredded cheddar and mozzarella cheese. Add mixture evenly on all 4 slices of bread.6.
Add American cheese to 2 of the slices. Place Spam on the sliced American cheese. Add kimchi evenly on the shredded cheese slices. Put sandwich together. The layers should be bread, shredded cheese, American cheese, spam, kimchi, more shredded cheese, bread, with buttered side facing out.7.
In a large nonstick skillet on medium heat, add your assembled sandwiches and griddle for about 3-4 minutes. If you have a small cast iron or something heavy to put on top of your sandwich, it will help press it. When golden and sizzling, flip over and griddle the other side until crispy, dark golden-brown and cheese is melted.
