- Vegetable oil, for brushing grill
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne powder
- 8 ears corn, husked
- 1/4 cup mayonnaise
- 1/2 cup crumbled cotija cheese (or Parmesan cheese if cotija is unavailable)
- 1 lime
Combine chili powder and cayenne in small bowl.Brush grill grates with vegetable oil and heat to medium high. Grill corn directly on the grates, turning occasionally, until cooked through and lightly charred, about 10 minutes.
Remove corn and immediately brush each ear with mayonnaise. Sprinkle each ear with about 1 tablespoon of cheese, then sprinkle each with a pinch of the chili powder mixture. Finish by squeezing lime juice all over each ear.
