TODAY nutritionist Joy Bauer taught Hoda Kotb how to make the healthiest and easiest breakfast ever — eggs and salsa microwaved in a mug — and now it's a staple in Hoda's diet. Though it's very simple, Hoda says it's "delicious."
Mist a mug with nonstick cooking spray, add the egg and egg whites, and whisk. Add the salsa and whisk again. Place in microwave for 45 seconds, remove and stir it all up. Microwave for another 45 seconds, remove and stir it all up again. Microwave one final time for 45 seconds and it¹s done! Top with optional seasonings, like ground black pepper, fresh chives, thyme or additional salsa. Then grab a fork and dig in!
