Ingredients

Banana Bread
  • 3 ripe bananas, mashed
  • 1 whole egg
  • 1 egg white
  • 2 tablespoons butter, melted
  • 1 tablespoon vanilla extract
  • 1/3 cup coconut sugar
  • cups oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 2 teaspoons cinnamon
  • 1 teaspoon turmeric
  • 2/3 cup sunflower seeds
Topping
  • 1/2 cup oats
  • 1/4 cup sunflower seeds
  • 1/3 cup coconut sugar
  • 2 tablespoons butter, lightly melted

Chef notes

This gluten-free version has all the flavor of traditional banana bread but with added healthy ingredients. The toasty oats and sunflower seeds add a pleasant crunch and extra nutrients.

Swap options: You can use brown sugar instead of coconut sugar and any type of flour you prefer.

Preparation

Preheat oven to 350 F.

In a large bowl, mix together the banana, eggs, egg white, butter and vanilla.

In another bowl, mix together the sugar, flour, baking powder, baking soda, salt, cinnamon, turmeric and sunflower seeds.

Add the dry ingredients to the wet ingredients and gently fold everything together, taking care not to over-mix.

Spray a baking dish with olive oil or nonstick cooking spray. Add the batter.

In a small bowl, mix together the ingredients for the topping. It should be crumbly. Then lightly sprinkle on top of the batter.

Bake for 22 to 25 minutes, or until you pierce it with a toothpick and it comes out clean.

Allow to cool for a few minutes before removing from the baking dish and slicing.
