

The brilliant thing about homemade oven fries is that there is very little fat or oil needed to cook them to get a crunchy tasty result. Pre-cooking the potatoes means you can get ahead of the game and have them ready to pop into the oven to crisp 40 minutes before serving.
Ingredients

- 8 medium-large organic floury potatoes, like russets
- 3 tablespoons rice flour
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon flaky salt
- Freshly ground black pepper
Preparation
Preheat oven to 400°F. Scrub the potatoes and then boil in salted water for 10 minutes. Drain and cool. Cut into chips or wedges. Transfer to a large bowl.
Add the rice flour, olive oil, salt, and pepper; toss to combine evenly. Spread out to a single layer on shallow roasting dish lined with parchment paper for easy clean up. Bake for 40-45 minutes until crispy and golden. Serve.
