I had never heard of Jell-O pie until I met Brian. He requests it every single year for his birthday. I used to always call his mom to quickly remind me how to make it, but it's so simple, I finally memorized it. It's laughably simple but is so delicious! If it wasn't for the boiling water (and having to open the Jell-O box), Calvin would totally make this himself. It's no-bake, pretty and an easy dessert to add to any holiday meal or any weeknight meal, for that matter.

Ingredients

  • 1 small box lime gelatin, such as Jell-O
  • 1 cup boiling water
  • 1 cup ice
  • 1 container frozen whipped topping, thawed, such as Cool Whip
  • 1 pre-made graham cracker pie crust

Preparation

In a large bowl, dissolve the gelatin in boiling water. Add ice and stir until melted. Remove any ice that doesn't melt. Stir in container of whipped topping.

Pour into the crust (I usually use the whipped topping container for the leftover mix!), refrigerate several hours or overnight.
