Dylan's Breakfast Delight Wraps

We have this little market in our building and the "breakfast delight wrap" is our favorite, although we always eat it for lunch. We've made a few small changes and the kids get so excited to eat it. Even Rusty eats the eggs and cheese out of the middle! Calvin asks me to make it for his school lunch, too!

Technique tip: Scramble the eggs with a little milk and salt and pepper. Don't break up too much as you cook it. It's easier to keep it together in the wrap when it's more like an omelet.

Ingredients

  • 1 large burrito-size tortilla
  • 2-3 eggs, scrambled
  • 2 slices Muenster cheese
  • 1/2 avocado, thinly sliced
  • 6-8 thin slices cucumber
  • 1 handful baby spinach
  • salt and freshly ground black pepper, to taste

Preparation

Warm the tortilla in a pan (or I just do it right on the gas stove).

In the middle of the tortilla, layer eggs with cheese, sliced avocado, cucumber slices and spinach. Sprinkle with salt and pepper.

Wrap up like a burrito, cut in half and serve. Enjoy!
