Devils on Horseback

Serves six Servings


  • 24 pitted prunes, soaked in boiling water for at least 30 minutes
  • 4 tablespoon mango chutney
  • 12 tablespoon rashers bacon
  • 4 slice toast, cut into 4 pieces
  • 3/4 stick butter
  • 1 bunch watercress


Baking Directions:

Pre-heat oven to 400F.

Stuff each prune with a teaspoon mango chutney.

Cut each rasher in half, wrap bacon around prune.

Place a cocktail stick in them prevent unraveling.

Place on a baking sheet.

Keep them packed up tight so that they don't unravel.

Bake for about 8 minutes.

Slather toast with butter.

Arrange two devils on each piece and garnish the dish with watercress.
