Chef notes
We are heading to Turkey, where my family comes from and is the world’s largest exporter of my favorite nut, hazelnuts! They're a great source of antioxidants. This is a traditional Turkish pairing and my personal version of heaven.
Ingredients
- 1 pound dark chocolate, 70% cacao
- ¾ cup hazelnuts, roughly chopped
- ¼ teaspoon kosher salt
Preparation
Place the chocolate onto a cutting board and with a serrated knife, shave the edges of the chocolate bar until the chocolate is in small pieces. Heat a small sauce pot filled half way up with water over medium heat. Place the chocolate into a heat proof glass bowl and place over the pot of simmering water. Stir the chocolate often until melted and smooth.
Once melted, pour the chocolate onto a chilled sheet pan lined with parchment and smooth out evenly. Sprinkle the hazelnuts and salt evenly over the top of the chocolate and set aside to cool at room temperature. Once firm, break into pieces and store in an air tight container at room temperature.
