Crispy Feta Rolls

I love anything sweet and salty, but this appetizer it also offers some crunch. The briny cheese, nutty sesame seeds and spicy dipping sauce is an irresistible combination of flavors and textures.

Ingredients

  • 2 (8-ounce) blocks feta cheese
  • 1 package filo dough, thawed
  • 1/2 cup unsalted butter, melted
  • Sesame seeds, for garnish
  • 1/4 cup honey
  • Sriracha, to taste

Preparation

Preheat the oven to 350 F. Line a baking sheet with parchment paper and set aside.

Cut each block of feta into 6 pieces and set aside.

Working carefully, lay one sheet of phyllo dough on a floured work surface. Using a pastry brush, spread the melted butter across the surface of the dough, then lay another sheet on top and brush with a bit more butter. Take one piece of feta, place it at the top of the shorter end of the pastry and roll like you would a burrito. Place each roll seam side down on the prepared baking sheet (keep the filo covered with a damp cloth or paper towel while you do this so it doesn't dry out).

Brush the top of each roll with more butter, sprinkle with sesame seeds and bake for 15 to 20 minutes, or until golden brown and crispy.

Warm the honey for a few seconds in the microwave or until it becomes runny. Whisk in sriracha, to taste, and drizzle over the crispy feta rolls. Dig in hot or serve at room temperature.
