Creamed kale



Creamed kale
  • 2 1/2 bunches of kale
  • 1 Onion, diced
  • 5 cloves of garlic
  • 1 1/2 Cups of cottage cheese
  • 1/2 cup of Parmesan cheese
  • 2 tbsp butter


Wash kale, remove from stems and chop.

Bring up 3 cups of water to a boil. Add salt . Add kale, turn down to medium heat and cook for 10 minutes.

While that is cooking, sauté onion and garlic in butter until butter is fragrant of garlic and onions are translucent.

After 10 minutes drain kale and make sure all water is squeezed out of kale. Add cheese and cottage cheese to food processor and process until smooth.

Add the kale and the onion, garlic butter to processor and process to the consistency you want.

Serve hot with more parm cheese on top.
