Every time I make this recipe I always think of my grandmother. There was a little restaurant down the street from her house that she always used to take me to. We always started out every lunch with their guacamole dip. This is my festive take on it.
- 8 avocados, pitted and peeled
- 1 lime, juiced
- 1/2 orange, juiced
- 1/2 red onion, diced
- 3/4 cup crumbled feta cheese
- 3/4 cup sweet dried cranberries
- Salt and freshly ground black pepper, to taste
In a medium bowl, mash the avocados. Stir in the lime and orange juices then fold in the onion, feta and cranberries.
Season with salt and pepper to taste and serve.
