Ingredients

  • 3 cups cornbread, diced into large cubes (or a combination of bread and cornbread, whatever you have!)
  • 1 roasted red pepper, diced
  • 1 bunch green onions, tops only, sliced
  • 10 eggs
  • 4 ounces herbed goat cheese
  • 1 teaspoon garlic powder
  • Salt and pepper
  • Cooking spray

    Trust us: this flavorful, cheesy casserole is the ultimate post-holiday breakfast. It's hearty and it's packed with unexpected flavors and textures you and your holiday guests won't be able to resist. 

    Preparation

    1.

    Preheat the oven to 350 degrees. 

    2.

    Spray a 9-inch by 13-inch pan with cooking spray. Add the cornbread to the bottom of the pan. Sprinkle the red pepper over the top, then sprinkle half of the green onions. 

    3.

    In a small bowl, whip the eggs with the garlic powder and 1/2 teaspoon of salt and pepper. 

    4.

    Pour the egg mixture over the cornbread. 

    5.

    Dollop the goat cheese onto the top. Don't worry if it sinks a little. Sprinkle the remaining green onions on the top and let the whole dish stand for 1 hour (you can make it ahead and or even place it in the refrigerator over night.) 

    6.

    Bake in the oven until the center is set and the top is golden, about 75-80 minutes. 

    7.

    Remove from the oven and serve immediately!
