Coconut Rice

Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 clove garlic, chopped
  • 2 cups white rice
  • 3 cups hot water
  • 1 cup coconut milk
  • Salt to taste

Preparation

In a large skillet, saute garlic and onion in a bit of olive oil until softened. Add the rice and cook until it begins to look transparent, stirring often, about 8 minutes. Add the water, coconut milk and salt. Bring to a simmer, cover the skillet and cook about 18 minutes, until the water has been absorbed. Remove the skillet from the heat and let sit, covered, about 10 minutes. Stir to fluff the rice.
