Ingredients
- 1 cup coconut milk
- 1 cup plain Greek yogurt
- ¼ cup chia seeds
- ¼ cup dried, shaved coconut
- 1 tablespoon maple syrup
- ¼ teaspoon cinnamon
- Pinch salt
Preparation
In a medium-sized mixing bowl, whisk the milk, yogurt and chia until seeds are mixed throughout. Mix in the coconut, maple syrup, cinnamon and salt. Pour into glass/plastic containers or jars with lids. (We like to use recycled jelly jars.) Cover and refrigerate overnight.
In the morning, top with your favorite toppings and enjoy.

- Chopped pecans
- Chopped walnuts
- Flax meal
- Oats
- Drizzle of maple syrup, honey or agave nectar
