Chef notes

Here's the secret for super easy and super tasty French toast: Just pop open a couple of cans of store-bought cinnamon rolls! The rolls take the place of the bread in the french toast, and the icing packet goes into an easy cream cheese frosting. It's an easy way to feed a crowd without a lot of fuss and muss. Serve with sausages for a nice salty contrast to the sweet french toast.

Ingredients

Cinnamon Roll Baked French Toast
  • 2 tubes refrigerated cinnamon rolls with icing
  • 4 tablespoons butter, melted
  • 6 eggs
  • 3/4 cup milk
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
Easy Cream Cheese Frosting
  • 1/2 cup butter
  • 6 ounces cream cheese
  • 2 teaspoons vanilla extract
  • 2 cups powdered sugar

Preparation

For the cinnamon roll baked french toast:

Preheat the oven to 375°F.

Butter the bottom of a 9-by-13-inch glass baking dish.

Cut each cinnamon roll into 8 pieces, and arrange evenly on the bottom of buttered dish. (Reserve the icing packets for the easy cream cheese frosting.)

In a separate bowl, make custard by whisking the eggs, milk, cinnamon, and vanilla. Pour over the cinnamon rolls. Bake for 45 minutes. Top with easy cream cheese frosting.

For the easy cream cheese frosting:

Heat butter in a microwave-safe dish in microwave on high for 7 seconds. Transfer butter to a bowl and beat with cream cheese and vanilla extract with an electric mixer until mixture is nearly fluffy, about 5 minutes. Gradually stir powdered sugar into cream cheese mixture to make a smooth frosting. Store in refrigerator until ready to use.
