Chunky Guacamole

Ingredients

  • 3 ripe avocados
  • 1 tablespoon fresh lime juice
  • 1 tablespoon small white onion, diced (1/3 cup)
  • 1/2 tablespoon jalapeno, stemmed, seeded and minced
  • 1 tablespoon medium tomato, seeded and diced
  • 1 tablespoon coarsely chopped cilantro leaves
  • 1 tablespoon kosher salt
  • Preparation

    Baking Directions:

    Cut each avocado in half.

    Remove pit.

    With a paring knife, make a cross-hatch pattern in each half and scoop out the flesh with a spoon.

    Combine all ingredients in a bowl and mash slightly with a fork, keeping a chunky texture.

    Serve immediately with tortilla chips or quesadillas.

    Makes about 2 1/2 cups.
